 Ingredients

  • 200 grams baby spinach leaves
  • 150 grams roasted pumpkin cubed
  • 10 cherry tomatoes halved
  • 1 avocado cubed
  • 1/2 cucumber diced
  • 100 grams feta crumbled
  • 3 tablespoons pumpkin seeds
  • 10-12 kalamata olives
  • 1/2 teaspoon salt and pepper
  • 2 tablespoons olive oil

 Instructions

  1. Combine all ingredients except the salt, pepper and olive oil in a large bowl and toss to lightly combine.

  2. Whisk the olive oil, salt and pepper and toss with the salad when ready to serve.
