- 200 grams baby spinach leaves
- 150 grams roasted pumpkin cubed
- 10 cherry tomatoes halved
- 1 avocado cubed
- 1/2 cucumber diced
- 100 grams feta crumbled
- 3 tablespoons pumpkin seeds
- 10-12 kalamata olives
- 1/2 teaspoon salt and pepper
- 2 tablespoons olive oil
Combine all ingredients except the salt, pepper and olive oil in a large bowl and toss to lightly combine.
Whisk the olive oil, salt and pepper and toss with the salad when ready to serve.
